Ingredients:
- 1/2 cup margarine
- 1 whole chicken, cooked and deboned
- 1 green pepper, diced
- 1 cup celery, diced
- 1 onion, diced
- 8 oz Velveeta cheese, cubed
- 1 cup green olives
- 1 can cream of mushroom soup
- 1 cup mushrooms, sliced
- Spinach noodles, cooked in chicken broth and drained (reserve broth)
- Bay leaf
- Cracker crumbs
- Butter, for dotting
- Salt and pepper to taste

Prepare the Chicken: In a large pot, cook the whole chicken with a bay leaf until fully cooked. Remove from the pot, debone, and set aside. Reserve the chicken broth for later use.

Cook the Spinach Noodles: Cook the spinach noodles in the reserved chicken broth according to package instructions. Drain the noodles, reserving the broth for later use.

Prepare the Sauce: In a skillet, melt the margarine over medium heat. Saute the diced green pepper, celery, and onion until tender.
