Instructions:

  1. Cook the Spaghettoni: Begin by filling a large pot with salted water and bring it to a boil. This will be used for cooking the spaghettoni.

  2. Prepare the Fondue:

    • In a small saucepan, pour in the fresh cream and heat over medium heat until it reaches a boil.
    • While the cream is heating, cut the Scimudin cheese into small cubes.
    • Once the cream starts to boil, turn off the heat and allow it to cool for about 1 minute, ensuring the temperature lowers slightly. This prevents the cheese from curdling.
    • Add the cubes of Scimudin to the cream. Stir gently to allow the cheese to melt.
    • Add the grated Parmigiano Reggiano to the cream and stir until everything is well combined into a smooth, rich fondue.
  3. Cook the Spinach: In a separate pan, heat a drizzle of extra virgin olive oil over medium heat. Add the spinach and sauté for a few minutes. Be careful not to overcook the spinach; it should remain vibrant and not wilt too much.

  4. Cook the Spaghettoni: Once the water is boiling, add the spaghettoni and cook according to the package instructions until they are al dente.

  5. Combine: Once the spaghettoni are cooked, drain them and immediately transfer them into the pan with sautéed spinach. Stir gently to combine.
