Ingredients:
- 400g cottage cheese (paneer or tofu)
- 1 piece ginger
- 4-5 cloves garlic
- 2-3 green chilies
- 2 onions
- 2 tbsp fresh coriander leaves
- 2 tbsp fresh mint leaves
- 1/2 cup low-fat plain yogurt
- 1/4 cup butter
- 2 tbsp ghee
- 2 bay leaves
- 1-inch cinnamon stick
- 2 green cardamoms
- 3-4 cloves
- 1 cup water
- 1/4 tsp peppercorns
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 1 tsp cumin powder
- Salt to taste
Instructions:
Step | Description |

1 | Cut cottage cheese into one-inch cubes. |
2 | Peel and crush ginger and garlic, along with green chilies, to form a fine paste. |
3 | Wash and finely chop fresh coriander leaves and mint leaves. |
4 | Whisk yogurt until smooth. |
5 | Peel and finely slice onions. |
6 | Heat oil in a pan and deep fry the sliced onions until golden brown. |
7 | Drain fried onions on absorbent paper and allow to cool. |
8 | Grind the cooled fried onions with two tablespoons of water into a smooth paste. |
9 | Heat butter in a narrow-mouthed pan (traditionally called a ‘handi’). |
10 | Add bay leaves, cinnamon, cardamoms, and cloves to the heated butter and stir-fry briefly. |
11 | Add ginger-garlic-chili paste and sauté on high heat for 30 seconds. |
12 | Introduce the brown onion paste, whisked yogurt, coriander powder, cumin powder, and salt to the pan. Stir well. |
13 | Pour in one cup of water and cook on high heat until the gravy begins to boil. |
14 | Add cottage cheese cubes, chopped coriander leaves, and mint leaves. |
15 | Stir in cream and crushed black pepper. Sprinkle garam masala powder. |
16 | Cover the handi with a tight-fitting lid and seal it with kneaded wholemeal flour (chapati dough) or aluminum foil. |
17 | Preheat oven to 200°C (392°F). |
18 | Place the sealed handi in the preheated oven and cook for 10-15 minutes. |
19 | Open the handi just before serving. |
20 | Serve hot with butter naan, plain naan, or rotis. |
Additional Notes:
- Optionally, for a quicker method, you can skip steps 17 to 19 and instead cook the dish on very low flame for 10 minutes after step 16. Then, uncover and serve immediately.
