Description:

These scrumptious potatoes in yogurt curry make a perfect accompaniment to hot rotis, naan, steamed rice, or garlic bread. Feel free to tailor the spice level to your preference by adjusting the amount of chili powder and green chilies used in this dish.

Ingredients:

  • 1 potato, cubed
  • 1 1/2 cups plain yogurt
  • 2 green chilies, whole
  • 1 onion, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons oil or ghee
  • 1 teaspoon minced ginger
  • Salt to taste
  • 1 cup water
  • Fresh coriander for garnish

Instructions:

Step Description
1. Place a skillet on medium heat and heat the oil/ghee in it.
2. Add the minced ginger to the skillet, followed by the chopped onion. Saute for about a minute until the onion turns translucent.
3. Toss in the potato cubes and fry them for a few minutes until they start to develop a golden brown color.
4. Reduce the flame to low, cover the skillet, and allow the potatoes to cook until they are tender. This usually takes about 10-12 minutes.
5. Once the potatoes are cooked through, uncover the skillet and add the whole green chilies, turmeric powder, chili powder, and salt. Stir well and fry for an additional 2-3 minutes.
6. Pour in the plain yogurt and mix it thoroughly with the potato mixture. Then, add the water and stir until everything is well combined.
7. Increase the heat to bring the mixture to a gentle boil.
8. Once it starts boiling, remove the skillet from the flame.
9. Garnish the dish with freshly chopped coriander leaves.
10. Serve the potatoes in yogurt curry hot alongside your favorite bread or rice. Enjoy!
