Ingredients:

4-6 Lasagna noodles

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  2. Prepare Tofu Mixture:

    • In a blender or food processor, combine the tofu, soymilk, dried oregano, dried basil, salt, lemon juice, garlic, and onions. Blend until the mixture reaches the consistency of cottage cheese.
    • If the mixture is too thick, add a little water to achieve the desired consistency.
  3. Add Spinach:

    • Stir in the chopped spinach until well combined. Set aside.
  4. Layering:

    • Cover the bottom of a lasagna pan with a thin layer of tomato sauce.
    • Place a layer of lasagna noodles over the sauce.
    • Spread half of the tofu mixture evenly over the noodles and sprinkle with 1/2 cup of optional cheese.
    • Add another layer of noodles followed by sauce.
    • Repeat the layering process with the remaining tofu mixture, optional cheese, and sauce.
    • Finish with a final layer of noodles and cover with sauce.
  5. Bake:

    • Top the lasagna with the remaining cheese.
    • Bake in the preheated oven for 30-45 minutes, or until the cheese is melted and bubbly.
  6. Serve:

    • Remove the lasagna from the oven and let it sit for 10 minutes before serving to allow it to set.
