With layers of vibrant spinach, tangy tomato sauce, and creamy cheese, it’s a comforting dish that satisfies with every bite. Baked to perfection, this lasagna emerges from the oven firm yet creamy, without any unwanted wetness. Ideal for busy weeknights or potluck gatherings, it’s a guaranteed crowd-pleaser that pairs wonderfully with a fresh green salad and a glass of dry red wine.
Ingredients:
- 1/2 bunch fresh spinach
- 1/2 cup crushed tomatoes
- 1 garlic clove
- 6 tablespoons olive oil
- 2 dashes fresh black pepper
- 3 tablespoons chopped parsley
- 1 cup sugar-free tomato puree
- 1/2 cup low-fat American cheese
- 2 tablespoons sour cream

- Begin by preheating your oven to 300°F.
- Chop the onion and peppers into small pieces.
- In a skillet, lightly fry the chopped onions and peppers in olive oil for a few minutes, then add a dash of black pepper.
- Stir in the minced garlic and mix well.
- Add the crushed tomatoes to the skillet and heat until a few bubbles appear.
- Slowly incorporate the sugar-free tomato puree into the mixture, followed by most of the chopped parsley, reserving a little for garnish. Set the sauce aside.

Prepare the Spinach:
- Ensure the spinach is thoroughly cleaned. (Tip: Place it in a drainer, sprinkle with salt, then wash it well.)
- Steam the spinach in a stainless steel drainer over a pot of boiling water for no more than 3 minutes.
- Drain the spinach and transfer it to a pan.
- Using a small hand blender, mix the spinach with sour cream and a generous amount of black pepper until smooth and creamy.

Assembly:
- Pour approximately 2 inches of the prepared red sauce into a baking dish and spread it evenly with a wooden spoon.
- Cover the sauce with a layer of lasagna sheets.
- Top the lasagna sheets with a layer of the creamy spinach mixture, spreading it evenly.
- Continue layering, alternating between the red sauce and spinach mixture until all ingredients are used, ensuring the top layer is covered with sauce to keep it moist.
- Sprinkle the low-fat American cheese evenly over the top layer.

- Place the assembled lasagna in the preheated oven, uncovered, and bake for about 1 1/2 hours, or until the cheese is golden brown and bubbly.
- Once done, remove the lasagna from the oven and let it sit for approximately 3 minutes to set.
