  • 1/8 tsp black pepper
  • 1 cup 1% low-fat milk
  • 1/2 cup chicken broth
  • 2 tbsp reduced-fat Romano cheese
  • 1 package (12 oz) frozen chopped spinach, thawed and drained
  • 9 oz fettuccine pasta

Instructions:

Step Description
1 In a saucepan, melt the butter over medium heat. Stir in the flour, salt, and pepper until well combined.
2 Gradually add the milk and chicken broth to the saucepan, stirring constantly to prevent lumps from forming.
3 Increase the heat and bring the mixture to a boil, continuing to stir constantly.
4 Once boiling, cook and stir for 1 minute to thicken the sauce.
5 Stir in the reduced-fat Romano cheese until it’s melted and fully incorporated into the sauce.
6 Add the thawed and drained spinach to the sauce, stirring until heated through.
7 Meanwhile, cook the fettuccine pasta according to the package directions until al dente.
