Spinach Gnocchetti in Taleggio Sauce

Fresh cream (liquid) 250ml

Instructions

  1. Prepare the Spinach Gnocchi:
    Start by boiling the potatoes in a pot of water until tender. Once cooked, peel them and mash them thoroughly to avoid lumps. While the potatoes are cooling down, steam the spinach until soft. Once the spinach has cooled, squeeze out any excess water and chop finely.

  2. Make the Dough:
    In a large bowl, combine the mashed potatoes, chopped spinach, and all-purpose flour. Add a pinch of salt and begin mixing until you have a smooth, cohesive dough. If the dough is too sticky, feel free to add a bit more flour, but be cautious not to overdo it.

  3. Shape the Gnocchi:
    On a floured surface, roll the dough into long cylinders about 2 cm in diameter. Cut the cylinders into small pieces to form the gnocchi. Gently press each piece with a fork to create the characteristic ridges. Set the gnocchi aside.

  4. Prepare the Taleggio Sauce:
    Remove the rind from the Taleggio cheese and cut it into small cubes. In a saucepan, add the Taleggio cubes along with the fresh cream. Over low heat, stir until the cheese melts completely and the mixture becomes smooth. Season with a pinch of salt and white pepper to taste.

  5. Cook the Gnocchi:
    Bring a large pot of salted water to a boil. Once boiling, add the gnocchi and cook them in batches. The gnocchi are ready when they rise to the surface, which usually takes just a few minutes.

  6. Combine and Serve:
    Use a slotted spoon to remove the gnocchi from the water and transfer them directly into the pan with the Taleggio sauce. Gently toss the gnocchi in the sauce for a few seconds to allow the flavors to blend. Serve hot, garnished with fresh chives for an extra touch of flavor and color.
