Ingredients:

6 tbsp Butter
3 tbsp Margarine
1 cup Frozen chopped spinach
1 1/2 cups Ricotta cheese
1/2 cup All-purpose flour
3/4 cup Parmesan cheese
2 Eggs
3 cups Water
3 tsp Chicken bouillon granules
1/4 cup Parmesan cheese

Instructions:

  1. Saute Onion:

    • In a skillet, melt 6 tablespoons of butter over medium heat.
    • Add the finely chopped onion and sauté until tender, stirring occasionally.
  2. Cook Spinach:

    • Add the frozen chopped spinach to the skillet.
    • Cook and stir over medium heat until the liquid has evaporated, approximately 5 minutes.
  3. Incorporate Ricotta:

    • Stir in 1 1/2 cups of ricotta cheese.
    • Continue cooking and stirring for an additional 3 minutes until well combined.
  4. Combine Ingredients:

    • Transfer the mixture to a large bowl.
    • Add 3/4 cup of all-purpose flour, along with Parmesan cheese and garlic salt to the bowl.
    • Allow the mixture to cool for 5 minutes.
  5. Mix Eggs:

    • Beat 2 eggs in a separate bowl.
    • Stir the beaten eggs into the spinach and ricotta mixture until thoroughly combined.
  6. Shape Dumplings:

    • Place the remaining all-purpose flour in a separate bowl.
    • Drop the batter by tablespoonfuls into the flour.
    • Roll gently to coat and shape each dumpling into an oval.
  7. Cook Dumplings:

    • In a large saucepan, bring 3 cups of water and 3 teaspoons of chicken bouillon granules to a boil.
    • Reduce the heat to a simmer.
