Vegetable Broth 900g
Shallot 1
Extra Virgin Olive Oil 20g
Butter 40g
Goat Cheese (Caprino) 80g
Strawberries 250g
Salt to taste

Instructions

To make this creamy and flavorful strawberry risotto, begin by preparing the vegetable broth. In a large pot, boil an assortment of vegetables (such as carrots, celery, tomatoes, and onions) in plenty of salted water for about an hour. Once the vegetables have softened and released their flavors into the water, strain the broth through a fine sieve to remove any solids, leaving behind a smooth, aromatic liquid.

Next, it’s time to cook the risotto. Start by peeling and finely chopping the shallot. In a large pan, heat the olive oil over low heat. Once the oil is warm, add the shallot and sauté gently. Stir occasionally, allowing the shallot to soften and turn golden in color, but be careful not to let it brown too much.

Once the shallot has reached the right color, pour in the white wine and let it evaporate. This will infuse the risotto with a subtle depth of flavor. After the wine has evaporated, begin adding the hot vegetable broth one ladleful at a time. Be sure to wait until the liquid is absorbed before adding more broth. Stir the risotto often to prevent it from sticking to the pan and to ensure an even cooking process. Continue adding the broth and stirring until the rice reaches your desired texture, typically after 15-20 minutes, depending on the cooking instructions on the rice package.

While the risotto is cooking, prepare the strawberries. Wash them thoroughly and remove the stems, slicing them into small pieces. These fresh strawberries will add a natural sweetness and vibrant color to the dish, making it both visually appealing and delicious.

Once the rice is fully cooked, season the risotto with a pinch of salt. Remove the pan from the heat and stir in the butter and goat cheese (caprino). The butter and cheese will melt into the risotto, creating a rich and creamy consistency. Finally, gently fold in the fresh strawberry pieces. Their natural juices will mingle with the creamy risotto, creating a perfect balance of savory and sweet flavors.

Serve the strawberry risotto immediately, ensuring it’s hot and well-mixed, so each bite is a harmonious blend of creamy, tangy, and slightly sweet flavors.

Enjoy this unique twist on a classic risotto that combines the savory depth of the rice with the refreshing sweetness of strawberries for a dish that’s perfect for a special occasion or a fresh summer dinner.
