Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Yield: 4 servings
Ingredients
- 2 to 2 1/2 pounds of sunburst pattypan squash
- 4 green onions, chopped
- 1/2 cup milk
- 3/4 cup Parmesan cheese, grated
- 5 tablespoons Romano cheese, grated
- 1 cup Swiss cheese, shredded
- 1 cup cream cheese, softened
- 1/2 cup bread crumbs (divided)
- Salt and pepper to taste
Instructions
-
Steam the Squash: Begin by steaming the whole sunburst pattypan squash until they are tender. This usually takes around 15 to 20 minutes. Once tender, remove from the steamer and allow to cool.
-
Prepare the Squash: Once cooled, carefully slice each squash in half horizontally. Use a spoon to scoop out the flesh, leaving about a 1/4 to 1/2 inch border around the edges. Set the scooped flesh aside for the filling.
-
Make the Filling: In a medium-sized bowl, chop the reserved squash flesh into small pieces. Add the cream cheese, chopped green onions, milk, Swiss cheese, and 1/2 cup of Parmesan cheese. Mix everything until well combined. Stir in 1/2 cup of bread crumbs. Season the mixture with salt and pepper to taste.
-
Stuff the Squash: Spoon the filling mixture into the hollowed-out squash halves. Press down gently to pack the filling in.
-
Add Toppings: In a small bowl, combine the remaining 1/2 cup of bread crumbs with 1/4 cup of Parmesan cheese. Sprinkle this mixture evenly over the stuffed squash halves.
-
Chill (Optional): If preparing ahead of time, cover the stuffed squash with plastic wrap and refrigerate until ready to bake.
-
Bake: When you’re ready to cook, preheat your oven to 350°F (175°C). Place the stuffed squash on a baking sheet and bake for approximately 40 minutes, or until the tops are golden brown and the filling is heated through.
-
Serve: Once baked, allow the stuffed squash to cool slightly before serving. Enjoy as a scrumptious side dish alongside your favorite grilled meats!
