  • 4 green onions, chopped

  • 1 cup Swiss cheese, shredded
  • 1 cup cream cheese, softened
  • 1/2 cup bread crumbs (divided)

Instructions

  1. Steam the Squash: Begin by steaming the whole sunburst pattypan squash until they are tender. This usually takes around 15 to 20 minutes. Once tender, remove from the steamer and allow to cool.

  2. Prepare the Squash: Once cooled, carefully slice each squash in half horizontally. Use a spoon to scoop out the flesh, leaving about a 1/4 to 1/2 inch border around the edges. Set the scooped flesh aside for the filling.

  3. Make the Filling: In a medium-sized bowl, chop the reserved squash flesh into small pieces. Add the cream cheese, chopped green onions, milk, Swiss cheese, and 1/2 cup of Parmesan cheese.
