Ingredients:

Instructions:

  1. Preheat the oven to 350ยฐF (175ยฐC).

  2. Cook the Sweet Potatoes:

    • Place the sweet potatoes in a medium saucepan with the salt and enough water to cover.
    • Cover and bring to a boil, then simmer until tender, about 10 minutes.
    • Drain and set aside.
  3. Prepare the Filling:

    • While the sweet potatoes are cooking, warm the oil in a medium skillet or saucepan.
    • Add the onions, garlic, and green chili pepper.
    • Cover and cook on medium-low heat, stirring occasionally, until the onions are tender, about 7 minutes.
    • Add the cumin and coriander and cook for an additional 2 to 3 minutes, stirring frequently.
    • Remove from heat and set aside.
  4. Make the Bean Puree:

    • In a food processor, combine the black beans, cilantro leaves, lemon juice, salt, and cooked sweet potatoes.
    • Puree until smooth, or alternatively, mash the ingredients in a large bowl by hand.
  5. Combine Ingredients:

    • Transfer the sweet potato and bean mixture to a large mixing bowl.
    • Mix in the cooked onions and spices until well combined.
  6. Assemble the Burritos:

    • Lightly oil a large baking dish.
    • Spoon about 2/3 to 3/4 cup of the filling into the center of each tortilla.
    • Roll up the tortillas, ensuring the filling is enclosed, and place them seam side down in the baking dish.
  7. Bake:

    • Cover the baking dish tightly with foil.
    • Bake for about 30 minutes, or until the burritos are piping hot.
  8. Serve:

    • Once baked, serve the burritos topped with salsa.
