Instructions

  1. Prepare the Crust
    Begin by preparing the dough for the crust. In a food processor, combine the butter, all-purpose flour, powdered sugar, and egg yolks. Pulse until the mixture resembles coarse crumbs or sand. Add the lemon zest to infuse a fresh, citrusy aroma into the dough.

  2. Form the Dough
    Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This step ensures the dough is chilled and easier to roll out later.

  3. Prepare the Sweet Potatoes
    While the dough chills, peel and cut the sweet potatoes into cubes. Place them in a large pot filled with water and bring to a boil. Cook the potatoes until they are soft and tender, about 15-20 minutes. Once cooked, drain the potatoes and transfer them to a mixing bowl. Mash them until smooth.

  4. Flavor the Filling
    In a separate bowl, add the mashed sweet potatoes, brown sugar, cinnamon sticks, freshly grated nutmeg, ground cloves, and cocoa powder. Grate the orange zest into the mixture and squeeze the juice from the orange, filtering out any seeds. Stir to combine and infuse all the spices and flavors.

  5. Finish the Filling
    Add the two whole eggs and the fresh cream to the sweet potato mixture. Mix thoroughly with a spatula until the filling is smooth and creamy.

  6. Prepare the Pie Crust
    Preheat your oven to 170°C (340°F) for conventional ovens or 150°C (300°F) for fan-forced ovens. While the oven heats, take the dough out of the fridge and roll it out on a lightly floured surface. You want the dough to be about 1 cm thick and large enough to cover the base and edges of a 26 cm diameter pie dish.

  7. Assemble the Pie
    Carefully lift the rolled-out dough using a rolling pin and place it into the pie dish. Press the dough gently into the base and along the sides. If the dough tears, patch it with small pieces. Once the crust is in place, pour the prepared filling into the crust and smooth the top with a spatula.

  8. Bake the Pie
    Place the pie in the preheated oven and bake for about 1 hour (or 50 minutes in a fan-forced oven). The filling should be set and the top lightly browned. You can test the center with a toothpick — it should come out clean when the pie is fully cooked.

  9. Cool and Serve
    Once baked, remove the pie from the oven and allow it to cool for about 30 minutes before serving. This will help the filling firm up and make slicing easier.
