Instructions
- 
Prepare the Pasta Water: Begin by filling a pot with water for boiling the pasta. Set it over medium-high heat. While waiting for the water to come to a boil, proceed with preparing the sauce. 
- 
Prepare the Shallots and Ham: Finely chop the shallot. In a large skillet, heat the extra virgin olive oil over medium heat. Add the chopped shallot to the pan and sauté it until softened and lightly golden.

Cook the Ham: Once the shallot has softened, cut 100 grams of the cooked ham into small cubes. Add it to the pan and allow it to sauté for a few minutes, stirring occasionally. The ham should slightly change color and become fragrant.

Add the Cream and Seasonings: Pour in the fresh liquid cream, stirring to combine. Season with a pinch of fine salt, a dash of white pepper, and a pinch of ground nutmeg. Allow the mixture to simmer gently, letting the flavors meld together.

Cook the Tagliatelle: By this time, the water for the pasta should be boiling. Add the tagliatelle to the pot and cook according to the package instructions until al dente. Remember to save a bit of the pasta water for later use.

Prepare the Rose Petals: While the pasta cooks, gently rinse the fresh rose petals and slice them into thin strips. Add the rose petals to the sauce once the cream has simmered.

Combine and Toss: Once the pasta is cooked, drain it, reserving some of the cooking water. Add the pasta to the sauce, stirring well to combine. If the sauce is too thick, gradually add a bit of the reserved pasta water to achieve the desired creamy consistency.

Finish with Ham and Serve: Stir in the remaining 50 grams of cooked ham that was set aside earlier. Taste the dish and adjust the seasoning if necessary. Serve the tagliatelle immediately, garnishing with a few more fresh rose petals for a beautiful touch.
