Ingredients:

  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano, divided
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 8 manicotti shells
  • 2 eggs, lightly beaten
  • 1 cup shredded mozzarella cheese, divided
  • 1 cup ricotta cheese or cream-style cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Dash of pepper

Instructions:

  1. Prepare the Sauce:

    • In a 2-quart saucepan, sauté the chopped onion and minced garlic in olive oil until tender.
    • Add the diced tomatoes, tomato sauce, sugar, 1 teaspoon of oregano, thyme, and bay leaf.

    • Pour the remaining tomato sauce over the shells.

    • Remove the foil and bake uncovered for an additional 10 minutes until the cheese is melted and bubbly.
