1 1/4 cups Milk

1 tsp Dry mustard

2 cups Cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 cup Parmesan cheese, shredded
2/3 cup Green onions, chopped
4 cups Dry penne pasta
Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. Melt butter and margarine over medium-low heat in a large saucepan.

  3. Add flour to the melted butter and whisk for about one minute, ensuring it’s well combined.

  4. Reduce the heat and continue cooking for about 3 minutes, stirring constantly to cook out the raw flour taste.

  5. Whisk in the vegetable broth, chicken broth, milk, dry mustard, and Worcestershire sauce until the mixture is smooth and thickened.

  6. Increase the heat to medium and stir in the diced tomatoes. Season with salt and pepper to taste. Cook for about 5 minutes, allowing the flavors to meld together.
