Instructions

  1. Sauté the Vegetables
    Begin by heating a large frying pan over medium heat. Add a drizzle of oil and toss in the sliced mushrooms and minced garlic. Sauté the mixture, stirring occasionally, until the mushrooms are softened and lightly browned.

  2. Add Sauce and Seasonings
    Pour in the spaghetti sauce (we recommend Prego for a rich flavor) and stir in the wheat germ, salt, and ground black pepper. Continue to cook the sauce until everything is well-blended and heated through, about 5 minutes. Remove from heat and set aside.

  3. Prepare Cheese Mixtures
    In a small bowl, combine the crumbled tofu with 1/2 cup of the grated Parmesan cheese, stirring to mix evenly. In a separate bowl, mix the shredded Mozzarella cheese with the chopped fresh parsley. Set both bowls aside.

  4. Preheat the Oven
    Preheat your oven to 375°F (190°C). Lightly grease a 12 x 8-inch baking dish to prevent sticking.

  5. Assemble the Lasagna

    • Begin with a thin layer of sauce spread over the bottom of the baking pan.
    • Place 3 lasagna noodles over the sauce, evenly spaced.
    • Spread half of the tofu-Parmesan mixture over the noodles, smoothing it out to create an even layer.
    • Sprinkle half of the Mozzarella-parsley mixture over the tofu layer.
    • Spoon half of the remaining sauce over the cheese layer.
    • Repeat with the remaining 3 lasagna noodles, topping with the remaining tofu mixture, Mozzarella mixture, and finally the rest of the sauce.
  6. Add the Final Cheese Layer
    Evenly sprinkle the remaining 1/4 cup of Parmesan cheese over the top layer of sauce, ensuring it covers the lasagna fully.

  7. Bake the Lasagna
    Place the assembled lasagna in the preheated oven. Bake for 20 to 30 minutes, or until the cheese has melted and the dish is thoroughly heated through.

  8. Serve and Enjoy
    Once baked, remove the lasagna from the oven and let it rest for 5 minutes before slicing. This will help the layers set, making it easier to serve. This lasagna serves 6 to 8 people and is best enjoyed warm.
