Ingredients:

  • 1 leek
  • 4 tbsp butter
  • 2 lbs tomatoes
  • 8 cups water
  • 4 vegetable bouillon cubes
  • 4 egg yolks
  • 1/2 cup milk
  • 1 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Croutons (optional, for serving)

Instructions:

Step Description
1 Prepare some liquid vegetable stock by boiling the water and adding the vegetable bouillon cubes.
2 Cut the leek and sauté it in butter until softened.
3 Add sliced tomatoes to the leek and cook for 10-15 minutes until they start to break down.
4 Stir frequently and then add the prepared vegetable stock. Cook slowly for 1 hour to develop flavors.
5 Pass the soup through a sieve to remove any solids.
6 Transfer the soup back to the pot and boil for an additional 30 minutes, stirring occasionally.
7 Skim off any foam that forms on the surface.
8 A few minutes before serving, whip the egg yolks and milk together until frothy.
9 Gradually add 2-3 spoonfuls of hot soup to the egg mixture while whisking continuously.
10 Slowly pour the egg mixture back into the soup, whisking constantly. Pass through a sieve if desired.
11 Season with salt, pepper, and a drizzle of olive oil.
12 Serve hot, garnished with croutons if desired.

Serving:

  • This Tomato Bisque is best served hot, straight from the stove.
  • For added texture and flavor, top with crunchy croutons just before serving.

Tips:

  • Be sure to pass the soup through a sieve after blending to achieve a smooth consistency.
  • Adjust the seasoning according to your taste preferences.
  • To make it even lighter, you can substitute part of the milk with low-fat yogurt.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Enjoy your homemade Tomato Bisque! 🥣🍅
