Creamy Tomato-Stuffed Caps Recipe πŸ…πŸ§€

Preparation Time: 20 minutes
Cooking Time: 32 minutes
Total Time: 52 minutes
Servings: 8

Ingredients:

  • 24 large mushrooms
  • 1 tomato
  • 1 1/2 tablespoons olive oil
  • 1/2 onion
  • 3 cloves garlic
  • 1/4 cup skim milk
  • 1 cup grated Parmesan cheese
  • 1 tablespoon vinegar
  • Salt and pepper to taste
  • Bread crumbs for topping

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 350Β°F (175Β°C) to ensure it’s ready for baking.

  2. Prepare the Mushrooms: Start by removing the stems from the mushrooms. Set aside the caps and finely chop the stems for later use.

  3. Prepare the Tomatoes: In a small bowl, pour boiling water over the tomato and let it stand for about 5 minutes. This will help in easy peeling. After 5 minutes, drain the tomatoes and set them aside.

  4. Prepare the Filling: In a 10″ nonstick skillet, heat the olive oil over medium-high heat. Add the onions and garlic, cooking until they become tender and fragrant, about 3 to 4 minutes.

  5. Cook the Mixture: To the skillet, add the chopped mushroom stems and tomatoes. Cook the mixture, stirring frequently, until the liquid has evaporated, and the mixture has thickened, which should take about 5 to 8 minutes.

  6. Process the Mixture: Transfer the cooked tomato mixture to a food processor. Add the skim milk, grated Parmesan cheese, and vinegar. Process the mixture until it becomes coarsely chopped and well combined.

  7. Prepare the Caps: Place the mushroom caps, stem side up, in a large shallow baking dish. These will serve as the vessel for our delicious filling.

  8. Stuff the Caps: Spoon equal amounts of the creamy tomato filling into each mushroom cap, ensuring they are evenly filled.

  9. Add Topping: Sprinkle each stuffed mushroom cap with a generous amount of bread crumbs. This will add a delightful crunch to the dish.

  10. Bake: Place the baking dish with the stuffed mushroom caps into the preheated oven. Bake them until the mushrooms are tender, and the filling is heated through, which usually takes around 15 to 20 minutes.

  11. Serve: Once baked to perfection, remove the creamy tomato-stuffed caps from the oven. Allow them to cool slightly before serving to avoid burning your mouth.

  12. Enjoy: These creamy, flavorful stuffed mushrooms make for an excellent appetizer or side dish. Serve them warm and watch them disappear within moments!

With a blend of earthy mushrooms, tangy tomatoes, and creamy Parmesan cheese, these stuffed caps are sure to impress your guests and become a favorite in your recipe collection. Try them out for your next gathering or weeknight dinner, and indulge in their irresistible flavors!
