Ingredients:

  • 4 cups cooked spaghetti
  • 1/4 cup butter + extra for greasing
  • 3 tablespoons flour
  • 2 cups hot chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon nutmeg
  • 2 tablespoons dry sherry
  • Salt, to taste
  • 3 cups cooked turkey slices
  • 1 cup sliced mushrooms
  • 1 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Butter a 2-quart shallow baking dish and spread the cooked spaghetti evenly in it.
  3. In a heavy pan, melt the 1/4 cup of butter over medium heat.
  4. Stir in the flour and blend until smooth, cooking for about 2 minutes while stirring constantly.
  5. Gradually add the hot chicken broth, stirring continuously until the sauce thickens.
  6. Bring the sauce to a boil, then reduce the heat and simmer for an additional 2 minutes.
  7. Pour in the heavy cream, add salt to taste, and heat the sauce thoroughly.
  8. Stir the nutmeg, dry sherry, and additional salt into the sauce, then set aside.
  9. In a skillet, melt the remaining butter and saute the sliced mushrooms until soft.
  10. Spoon half of the sauce over the spaghetti in the baking dish.
  11. Arrange the cooked turkey slices and sautéed mushrooms on top of the sauce.
  12. Cover the turkey and mushrooms with the remaining sauce.
  13. Sprinkle the grated Parmesan cheese evenly over the top.
  14. Bake in the preheated oven for 30 minutes or until the top is golden brown and bubbly.
