Cuisine: Continental
Course: Snack
Diet: Vegan

Ingredients:

  • 1 cup Kabuli Chana (White Chickpeas), soaked overnight and cooked
  • 1/4 cup Peanut Butter (or almond butter)
  • 2 cups Soy Milk
  • 2 teaspoons Vanilla Extract
  • 1/3 cup Date Syrup
  • 1/4 cup Cocoa Powder
  • 1-1/2 Ripe Bananas, fully ripe
  • A pinch of Salt

Preparation Time: 40 minutes

Cooking Time: 0 minutes

Instructions:

  1. Soak and Cook the Chickpeas: Soak the chickpeas in enough water overnight or for at least 6 hours. Once soaked, pressure cook the chickpeas until soft. Drain the water and allow them to cool completely. For a creamier texture and to remove any lingering chickpea flavor, remove the skins from the cooked chickpeas.

  2. Blend the Ingredients: In a food processor or blender, combine the chickpeas with the peanut butter, soy milk, vanilla extract, date syrup, cocoa powder, bananas, and a pinch of salt. Blend until smooth and creamy. For an extra creamy texture, feel free to add thick coconut milk or almond milk.

  3. Freeze the Mixture: Pour the mixture into popsicle molds and freeze for at least 4 hours or overnight.

  4. Serve and Enjoy: Once frozen, let the fudgesicles thaw on the counter for 3–4 minutes before unmolding. Enjoy your delicious, healthy, and refreshing vegan treat!

Pro Tip: These Vegan Chocolate Fudgesicles make for a perfect post-meal dessert. Pair them with a hearty Creamy Mushroom Risotto for a satisfying, balanced meal.

Notes:

  • If you’re looking for an even creamier fudgesicle, adding a bit of coconut milk or almond milk will give them an extra luscious texture.
  • You can adjust the sweetness by adding more or less date syrup based on your taste preferences.
