Instructions

  1. Prepare the Peppers:
    • Begin by placing the black and pink peppercorns in a mortar and pestle. Grind them well until they form a fine powder, releasing their aromatic oils.
  2. Blend the Tofu:
    • Transfer the tofu to a food processor or high-speed blender. Pulse to roughly break it down into smaller pieces.
    • Add the water and continue to blend until the mixture becomes smooth and homogeneous.
  3. Add Seasonings:
    • Once the tofu mixture is smooth, add in the freshly squeezed lemon juice and sea salt. Mix thoroughly to incorporate all the ingredients evenly.
  4. Prepare the Mold:
    • Line a 13 cm round mold or small baking dish (with a 6 cm high border) with food wrap (cling film) for easy removal later.
  5. Fill the Mold:
    • Spoon the tofu mixture into the prepared mold, smoothing the top evenly.
    • Cover with more cling film, pressing it down gently to prevent air gaps. Remove any excess film on top.
  6. Form the Cheese:
    • Gently flip the mold onto a sheet of parchment paper. Carefully remove the mold and peel off the cling film.
    • Sprinkle the powdered pepper mixture over the top and sides of the cheese, pressing it gently into the surface so that it adheres well.
  7. Chill the Cheese:
    • Re-cover the cheese with cling film and place it back into the mold.
    • Chill in the refrigerator for about one hour to allow it to firm up.
  8. Final Touches:
    • After an hour, remove the cheese from the fridge and carefully remove the cling film. Let it rest in the fridge for another 2 hours before serving to ensure the flavors meld together.
