Description
Chip Moody was a beloved News Anchor in Dallas/Ft. Worth and in Houston. He was also a very good friend and neighbor of my best friend’s father. When my best friend and I were just venturing out on our own, we cooked an elaborate dinner for her father and some guests. This was one of my mother’s recipes that we made for Chip Moody, and he absolutely loved it. He has since passed away, but I will never forget the pride we felt when he went on and on about the fabulous chicken and asked for the recipe. It is a great company-worthy dish.
Ingredients
- 4 boneless skinless chicken breasts
- 3/4 cup flour
- 1 egg
- 3/4 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 1/4 cup butter
- 1 package cream cheese
- 1/2 cup butter, softened
- 1 tablespoon parsley, chopped
- 1/2 cup walnuts, chopped
- 2 cups Swiss cheese, shredded
- 3-4 cups cooked long grain and wild rice
Instructions

1 | Melt butter for frying in a large sautΓ© pan. |
2 | Season chicken breasts with salt and pepper. |
3 | Coat chicken breasts in flour, then dip in beaten egg, and finally coat with bread crumbs. |
4 | SautΓ© chicken in butter until lightly browned on both sides. |
5 | In a bowl, mix cream cheese, softened butter, parsley, and chopped walnuts. |
6 | Divide the cream cheese mixture into 4 egg-shaped balls. |
7 | Roll each cream cheese ball in shredded Swiss cheese to coat well. |
8 | Place cooked rice into a casserole dish. |
9 | Wrap each sautΓ©ed chicken breast around a cream cheese “egg”, placing them seam side down over the rice. |
10 | You may secure the chicken with toothpicks, but remember to remove them before serving. |
11 | Bake at 350Β°F (175Β°C) for 15 to 20 minutes, until chicken is cooked through. |
12 | In the last 3 minutes of baking, top each chicken breast with more shredded Swiss cheese. |
13 | Serve hot and enjoy! This dish can also be made ahead and frozen for later use. |
