Instructions:
Step 1: Prepare the Bechamel Sauce
- Begin by heating the milk in a small pot over low heat.
- In a separate pan, melt the butter over low heat. Once melted, add the flour all at once.
- Remove from heat and slowly pour in the warmed milk, stirring constantly with a whisk to avoid lumps.
- Return the mixture to low heat, continuing to stir until the sauce thickens. Set aside.
Step 2: Prepare the Sausage and Spinach Filling
- Finely chop the onion. Remove the casing from the sausage and break it into small pieces.
- Heat a pan over medium heat and sauté the onion in olive oil until softened.
- Add the sausage to the pan and cook, breaking it up with a spoon until fully browned.
- Transfer the sausage to a bowl and set aside.
- Wash the spinach thoroughly. Add a pinch of salt to the spinach and place it in a large pan with a lid. Cover and let it wilt for about 5 minutes. After 5 minutes, stir in the remaining spinach and cook for an additional 5 minutes with the lid on.
- Once the spinach has cooked down, remove from the heat and squeeze out any excess moisture.

- Preheat your oven to 200°C (static mode).
- Grease a baking dish (about 35 x 25 cm in size) and spread a few spoonfuls of the bechamel sauce on the bottom of the dish.
- Layer the dry lasagna sheets on top of the sauce. Follow this with a layer of bechamel sauce, then add a layer of cooked sausage, followed by the sautéed spinach. Repeat this layering process, finishing with a final layer of pasta and sauce.
- Grate the Grana Padano cheese on top of the final layer for added flavor.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and continue baking for another 10 minutes to allow the top to turn golden and bubbly.
