Yogurt (Dahi) ΒΌ cup
Red Chili Powder 1 tsp
Turmeric Powder (Haldi) Β½ tsp
Coriander Powder (Dhania) Β½ tsp

Instructions

  1. Heat Oil: Start by heating oil in a wok (kadhai) over medium heat. Once the oil is hot, add cumin seeds (jeera), mustard seeds (rai), curry leaves (kadhi patta), and finely chopped green chili. Let them splutter for about 10 to 15 seconds.

  2. Add Garlic and Onion: Add the finely chopped garlic and onion to the wok. SautΓ© them until the onions turn soft and translucent.

  3. Cook Bottle Gourd: Now, add the chopped bottle gourd (lauki) to the wok. Stir well and then add salt, turmeric powder (haldi), and mix everything together. Cook for 3 to 4 minutes to let the bottle gourd absorb the spices.

  4. Add Tomato and Spices: Add the chopped tomato, red chili powder, and coriander powder. Stir everything well, cover the wok, and cook for another 5 to 7 minutes, allowing the tomatoes to soften and blend with the spices.

  5. Prepare Yogurt Mixture: In a separate bowl, whisk together the yogurt and a little water to create a smooth mixture.

  6. Add Yogurt: Once the bottle gourd is tender, reduce the heat to low and slowly add the yogurt mixture to the wok. Stir gently to ensure the yogurt mixes evenly with the vegetables.

  7. Simmer and Serve: Cover the wok again and let the sabzi cook for an additional 5 minutes, allowing the flavors to combine. After 5 minutes, your delicious Sukhi Dahi Wali Lauki is ready to serve!
