  1. Prepare the Roux:

    • Add canola oil to a skillet and heat over medium heat.
    • Gradually sprinkle in the flour, stirring constantly to combine.
    • Continue cooking until the roux reaches the color of a penny, about 15 minutes.
  2. Sauté Vegetables:

  3. Combine Ingredients:
