Recipe: Cimin/Cilor/Aci Telor

Ingredients:

  • 100 grams all-purpose flour
  • 100 grams sago flour
  • 75 ml boiling water
  • 1/2 tablespoon salt
  • 2 eggs
  • Sugar, to taste
  • Seasoning, to taste
  • Cooking oil
  • Water, as needed (for boiling)

Instructions:

  1. Preparation: Begin by gathering all necessary tools and ingredients.

  2. Mix Dry Ingredients: In a mixing bowl, combine the all-purpose flour, sago flour, salt, and sugar. Stir the ingredients together until well blended.

  3. Add Flavors: Incorporate finely minced garlic into the dry mixture, stirring until evenly distributed.

  4. Add Boiling Water: Heat water until it reaches a rolling boil. Gradually add the boiling water to the flour mixture. This step is crucial as the hot water helps the sago flour to achieve the right texture.

  5. Combine Ingredients: Stir the mixture until it forms a smooth, cohesive dough. If the dough is too dry and crumbly, add additional water a little at a time until the dough is pliable and can be easily shaped.

  6. Shape the Dough: Once the dough is ready, shape it into elongated pieces. Keep the pieces thin to ensure even cooking. Alternatively, you can flatten the dough slightly, which will help it cook more quickly and become crispier.

  7. Boil the Dough: Prepare a pot of water for boiling. When the water is hot, carefully add the shaped dough pieces. Boil for approximately 10 minutes, or until the pieces rise to the surface and are fully cooked. Note that thicker pieces will require a longer cooking time.

  8. Drain and Cool: Remove the cooked dough pieces from the pot and drain them well. If the pieces are still hot, allow them to cool slightly before cutting.

  9. Cut and Prepare for Frying: Cut the boiled dough into small, square pieces, similar to the size often seen at street vendors. Place the pieces in a container and lightly coat with a bit of oil to prevent sticking.

  10. Fry the Pieces: Heat a pan with small holes and add oil. Once the oil is hot, add the dough pieces and fry until they turn golden brown and crisp.

  11. Add Egg: For added flavor, beat the eggs and pour them over the frying pieces. Adjust the amount of egg based on your preference; more egg will result in a richer flavor, while less egg will make for a lighter coating. Continue to fry until the egg is cooked and the dough pieces are crispy.

  12. Season to Taste: Once fried to your liking, remove the pieces from the pan and season them with your preferred spices or seasoning.

  13. Optional: If you prefer smaller pieces, you can crumble the fried dough and mix it with seasoning to taste.

Enjoy your crispy, flavorful Cimin/Cilor/Aci Telor as a delightful snack or appetizer!
