Singoda Flour (Water Chestnut) 1 tablespoon

Green Chillies 3, chopped (adjust to preference)

Coriander (Dhania) Leaves 1 tablespoon, chopped
Red Chilli Powder To taste
Garam Masala Powder 1/2 teaspoon

Instructions

  1. Prepare the Potatoes:
    Start by washing and boiling the potatoes until they are soft. Once done, peel off the skin and mash them well. Place the mashed potatoes in a large mixing bowl.

  2. Mix the Ingredients:
    Add the crumbled homemade cottage cheese (paneer), grated ginger, and chopped green chillies to the mashed potatoes. Mix well to combine. Add the hung curd (Greek yogurt), salt, red chilli powder, garam masala, and chopped coriander leaves. Stir everything together until all the ingredients are well incorporated.

  3. Form the Kebabs:
    Add the singoda flour (water chestnut flour) into the mixture and combine until you achieve a smooth, dough-like consistency. Shape the mixture into small round or oval patties, ensuring they are compact so they don’t break during cooking. Place the patties on a plate.

  4. Preheat the Air Fryer:
    Preheat your air fryer to 180°C (350°F) for about 10 minutes to ensure it is evenly heated.

  5. Air Fry the Kebabs:
    Lightly brush the kebabs with a small amount of oil to help them crisp up. Place the kebabs in the basket of the air fryer, ensuring they are spaced apart to allow proper air circulation. Air fry the kebabs for 15-18 minutes, or until they are golden brown and crispy on the outside. You can brush them with a little more oil halfway through if you like, but this step is optional.
