For the Pakora Batter:

Instructions
Step 1: Prepare the Green Chutney
- In a blender or mixer grinder, combine coriander leaves, mint leaves, curry leaves, green chillies, roasted peanuts, ginger, lemon juice, sugar, salt, and water.
- Blend until smooth.
- Transfer the chutney to a bowl and set it aside.
Step 2: Make the Potato Filling
- In a large mixing bowl, add the boiled and mashed potatoes.
- Mix in the finely chopped onions, green chillies, cumin powder, red chilli powder, turmeric powder, amchur powder, chaat masala, coriander leaves, and salt.
- Combine well to ensure the spices are evenly distributed. Set aside.
Step 3: Prepare the Pakora Batter
- In another bowl, combine gram flour (besan), rice flour, ajwain, red chilli powder, turmeric powder, asafoetida, and salt.
- Gradually add water while whisking to create a lump-free, thick batter.
- Add Enos Fruit Salt and mix gently to incorporate. The batter should be thick enough to coat a spoon but still flow smoothly.
Step 4: Assemble the Bread Pakoras
- Spread a layer of green chutney on one side of a slice of bread.
- Place a generous amount of the prepared potato filling on top of the chutney.
- Cover with another slice of bread, pressing gently to create a sandwich. Repeat for the remaining bread slices.
Step 5: Fry the Bread Pakoras
- Heat oil in a deep frying pan over medium heat.
- Dip each sandwich into the pakora batter, ensuring it is completely coated.
- Carefully lower the coated sandwich into the hot oil and fry until golden brown and crispy on all sides.
- Remove the pakoras from the oil and place them on paper towels to drain excess oil.
Step 6: Serve
- Slice the bread pakoras diagonally for easy serving.
- Serve hot with the remaining green chutney and a cup of steaming tea.
