Arugula, Beet, Walnut & Radish Salad Cups

Puff pastry discs 16 pieces
Extra virgin olive oil To taste
Egg yolk 1
Arugula 100g
Cooked beets 70g
Walnuts 50g
Radishes 100g
Balsamic vinegar To taste

Instructions:

  1. Prepare the Puff Pastry Cups:

    • Start by shaping the base of your puff pastry cups. Take the puff pastry discs and layer them, ensuring they form the shape of small cups. You can overlap them slightly to create a sturdy base.
    • Use a kitchen brush to apply a thin layer of beaten egg yolk on the surface of each pastry disc.
    • Preheat your oven to 200°C (static) or 180°C (fan). Bake the pastry discs for about 12 minutes (if using a fan oven, bake for 8-10 minutes).
    • Once golden and crispy, remove from the oven and allow the pastry cups to cool. Once cooled, carefully remove the cups from the molds and set them aside.
  2. Prepare the Salad:

    • Dice the cooked beets into small cubes.
    • Roughly chop the walnuts into smaller pieces.
    • In a large mixing bowl, combine the diced beets with the arugula (ensure the arugula is washed and dried beforehand).
    • Add the chopped walnuts and thin slices of radish for a crisp bite.
  3. Dress the Salad:

    • Drizzle extra virgin olive oil over the salad mixture, followed by balsamic vinegar. Season with salt and freshly ground black pepper to taste.
    • Toss the salad gently to ensure all ingredients are evenly coated with the dressing.
  4. Assemble the Cups:

    • Carefully spoon the prepared salad into each puff pastry cup. Use two spoons to help fill the cups with a balanced portion of the salad.
