  1. Begin by preparing the asparagus. Trim the tough, woody ends of the stalks and peel the lower part of the stems to ensure they cook evenly. After trimming, wash the asparagus thoroughly under cold water and pat dry with a towel.
  2. Next, blanch the asparagus in boiling salted water for 2-3 minutes until they turn bright green but remain slightly crisp. Once done, immediately transfer the asparagus to a bowl of ice-cold water to stop the cooking process, then drain well.
  3. Roll out the puff pastry on a lightly floured surface. Using a sharp knife, cut the dough into long strips, enough to wrap around the asparagus bundles.
  4. Lay the prosciutto slices flat on the pastry strips, slightly overlapping them. Then, place a bundle of asparagus on top of the prosciutto. Sprinkle a small amount of grated Grana Padano over the asparagus for an added layer of flavor.
  5. Carefully roll the puff pastry around the asparagus and prosciutto, ensuring the edges are sealed to avoid any filling spilling out during baking.
  6. Beat the egg in a small bowl and brush it over the wrapped pastry to give it a golden, glossy finish once baked.
