Asparagus Rolls with Three Dipping Sauces

Fillo pastry sheets 2 sheets
Fine salt to taste
Mayonnaise 200g
Lime ½ lime
Curry powder 1 tsp

Instructions:

  1. Prepare the Asparagus: Start by cleaning the asparagus. Rinse them thoroughly under cold water, then gently pat them dry with a clean towel. Trim off the tough, woody white ends of each spear.

  2. Blanch the Asparagus: Bring a pot of salted water to a boil. Once the water is bubbling, carefully drop in the asparagus and let them cook for about 5 minutes, just until they are tender yet still crisp.

  3. Cool the Asparagus: Once cooked, quickly transfer the asparagus to a bowl filled with ice water to stop the cooking process and preserve their bright green color. After a couple of minutes, drain the asparagus and pat them dry again with a paper towel or clean cloth.

  4. Prepare the Fillo Pastry: Unroll the fillo pastry and use two sheets at a time. Place them one over the other, ensuring they are neatly aligned. This will give you a stronger base for wrapping the asparagus.

  5. Assemble the Rolls: Place each asparagus spear at the edge of the fillo pastry and roll them up tightly, making sure the pastry encloses the asparagus completely. You should be able to fit all 16 asparagus spears into this amount of fillo pastry.

  6. Bake the Rolls: Line a baking tray with parchment paper and arrange the asparagus rolls on it. Preheat the oven to 200°C (390°F) and bake the rolls for about 15 minutes, or until they are golden and crisp.

  7. Prepare the Dipping Sauces: While the rolls are baking, prepare the three dipping sauces. Divide the mayonnaise into three separate bowls.

    • In the first bowl, add the zest and juice of half a lime. Mix well.
    • In the second bowl, add the curry powder and stir to combine.
    • In the third bowl, add a pinch of chili powder, giving it a subtle kick.
