Instructions

  1. Prepare the Filling:

    • In a large mixing bowl, place the boiled potatoes and eggs. Using a fork or masher, blend them together until smooth and well combined.
  2. Saute Aromatics:

    • Heat 2 teaspoons of sunflower oil in a wok or small frying pan over medium heat. Add the chopped onion and green chilies, and sauté until the onions become translucent.
  3. Season the Mixture:

    • Season the onion mixture with salt, cumin powder, and turmeric powder. Continue to fry for about 2 minutes, allowing the spices to release their aroma.
  4. Combine the Filling Ingredients:

    • Add the seasoned onion mixture into the mashed potatoes and eggs. Stir well to ensure all flavors are evenly incorporated.
  5. Shape the Cutlets:

    • Take portions of the egg and potato mixture, shaping them into small, round, or oval cutlets based on your preference.
  6. Bread the Cutlets:

    • Dip each cutlet into the beaten eggs to coat, then roll them generously in the bread crumbs, ensuring an even coating for a crispier texture.
  7. Deep Fry:

    • In a deep frying pan, heat sufficient sunflower oil for deep frying over medium heat. Carefully place the breaded cutlets in the oil and fry until they turn golden brown, flipping halfway through if necessary. Transfer to a paper towel to drain any excess oil.
  8. Serve:

    • Enjoy the Egg Shoap while hot, paired with a roasted tomato sauce for dipping. This makes for an ideal snack during cool evenings or as a warm appetizer for gatherings.

Serving Suggestions

Egg Shoap is best enjoyed with a spicy roasted tomato sauce or a tangy mint chutney to balance its savory flavors.
