Ingredients:
- 4 Whole Eggs, boiled with salt (for the center)
- 4 Potatoes (Aloo), boiled
- 1 Carrot (Gajjar), diced small
- 1 cup Cabbage (Patta Gobi/ Muttaikose), diced small
- 1 Onion, finely chopped
- 1 tsp Red Chilli Powder
- 1 tsp Turmeric Powder (Haldi)
- 1 tsp Coriander Powder (Dhania)
- 1 tsp Garam Masala Powder
- Salt, to taste
- Oil, for cooking
- Bread Crumbs (for coating)
Instructions:
- Begin by heating a saucepan with a little oil. Sauté the onion, carrot, and cabbage until softened.
- Add the red chilli powder, turmeric powder, coriander powder, and garam masala powder to the vegetables. Toss to combine and cook for 2 more minutes. Season with salt and pepper to taste.
- Add the sautéed vegetables to the boiled and mashed potatoes, mixing them together until well combined into a smooth paste.
- Take each boiled egg and carefully wrap it with the spiced potato mixture, ensuring it is fully coated.
- Coat the wrapped eggs evenly with bread crumbs.
- Heat oil in a flat pan and gently fry the coated koftas until golden and crisp on all sides.
- Serve the Awadhi Style Nargisi Kofta as a delicious party appetizer or snack.
