Awadhi Style Nargisi Kofta is a delicious, dry kofta served as a starter. This innovative recipe wraps boiled eggs with spiced potato, then crisply fries them, making it an ideal dish for parties or special occasions.

Ingredients:

  • 4 Whole Eggs, boiled with salt (for the center)
  • 4 Potatoes (Aloo), boiled
  • 1 Carrot (Gajjar), diced small
  • 1 cup Cabbage (Patta Gobi/ Muttaikose), diced small
  • 1 Onion, finely chopped
  • 1 tsp Red Chilli Powder
  • 1 tsp Turmeric Powder (Haldi)
  • 1 tsp Coriander Powder (Dhania)
  • 1 tsp Garam Masala Powder
  • Salt, to taste
  • Oil, for cooking
  • Bread Crumbs (for coating)

Instructions:

  1. Begin by heating a saucepan with a little oil. Sauté the onion, carrot, and cabbage until softened.
  2. Add the red chilli powder, turmeric powder, coriander powder, and garam masala powder to the vegetables. Toss to combine and cook for 2 more minutes. Season with salt and pepper to taste.
  3. Add the sautéed vegetables to the boiled and mashed potatoes, mixing them together until well combined into a smooth paste.
  4. Take each boiled egg and carefully wrap it with the spiced potato mixture, ensuring it is fully coated.
  5. Coat the wrapped eggs evenly with bread crumbs.
  6. Heat oil in a flat pan and gently fry the coated koftas until golden and crisp on all sides.
  7. Serve the Awadhi Style Nargisi Kofta as a delicious party appetizer or snack.
