Super Simple Ayam Geprek
Ingredients:
- 1 kg chicken (I used chicken breasts, but thighs work well too)
- 1 cup all-purpose flour (I used pre-mixed flour)
- 10 bird’s eye chilies (adjust to taste)
- 2 cloves garlic (you can add more garlic if you like it spicier)
- Salt
- Sugar
- Water
- Cooking oil

Prepare the Chicken:
- Cut the chicken into bite-sized pieces. Rinse and drain well. Season with a pinch of salt and let it sit for 5 minutes.

Prepare the Breading:
- Set up a breading station with two separate bowls. In one bowl, place the wet flour (mix with a little water if needed). In the other bowl, place the dry flour.

Bread the Chicken:
- After the chicken has rested, dip each piece into the wet flour, allowing any excess to drip off. Then, coat the chicken thoroughly with the dry flour. Place the breaded chicken pieces on a plate.

Chill the Chicken:
- Refrigerate the breaded chicken for 10 minutes. This helps the coating adhere better during frying.

Prepare the Chili Sauce:
- While the chicken chills, prepare the chili sauce. In a mortar and pestle or blender, coarsely grind the bird’s eye chilies and garlic. Add a pinch of salt and a small amount of sugar. Grind until well mixed and set aside.

- Heat oil in a pan over medium heat. Ensure the oil is stable and not too hot to ensure the chicken cooks evenly. Fry the chicken pieces until golden brown and cooked through, about 5-7 minutes depending on the size of the pieces.

- Once the chicken is fried, carefully remove a small amount of hot oil from the pan. Pour this hot oil over the prepared chili sauce. Mix well.
