Ayam Geprek (Crispy Fried Chicken with Spicy Sambal) 🍗🌶🌶

Ingredients:

For the Chicken:

  • 500g chicken fillets (boneless)
  • 4 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon chicken seasoning (e.g., Masako or similar)

For the Sambal:

  • 3 shallots
  • 7 cloves garlic
  • 10 red chili peppers (cabe rawit merah)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil (hot)

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken fillets thoroughly. Rub them with minced garlic, ground black pepper, and salt. Let the chicken marinate for 15 minutes.
  2. Make the Batter:

    • In a bowl, combine 1 cup of all-purpose flour with 1 teaspoon of baking powder and 1 teaspoon of salt. This will be your wet batter.
  3. Coat the Chicken:

    • Dip each marinated chicken fillet into the wet batter, ensuring it is fully coated.
  4. Prepare the Dry Coating:

    • In another bowl, mix 1 cup of all-purpose flour with 1 teaspoon of chicken seasoning. This will be your dry coating.
  5. Double-Coat the Chicken:

    • Coat the wet-battered chicken fillets in the dry coating mixture, then dip them back into the wet batter, followed by another coating in the dry mixture.
  6. Fry the Chicken:

    • Heat vegetable oil in a deep pan or fryer. Fry the coated chicken fillets until they are golden brown and crispy, and the internal temperature reaches 75°C (165°F). Drain on paper towels.
  7. Prepare the Sambal:

    • Using a mortar and pestle or a food processor, coarsely grind the shallots, garlic, and red chili peppers. Add sugar and salt, and mix well.
  8. Finish the Sambal:

    • Heat 2 tablespoons of vegetable oil until hot. Pour the hot oil over the ground sambal mixture, mixing thoroughly to incorporate the flavors.
  9. Assemble the Dish:

    • Place the fried chicken fillets on a serving plate or cutting board. Gently crush or “geprek” the chicken with the back of a spoon or a meat mallet to slightly flatten it and expose more surface area.
  10. Serve:

    • Spoon the prepared sambal over the crispy chicken. Serve immediately and enjoy the explosive combination of flavors!
