Ingredients

For the Chicken:

  • 1/2 chicken, cleaned and patted dry
  • 1 package Kobe Fried Chicken Flour
  • 1/2 teaspoon baking powder
  • Ice water
  • Bouillon powder
  • Salt
  • Chili powder

For the Marinade:

  • 1/2 teaspoon bouillon powder
  • 1/2 teaspoon chili powder
  • 4 cloves garlic, minced
  • 1/2 teaspoon Ladaku seasoning powder
  • 1/2 teaspoon coriander powder
  • Salt to taste

For the Sambal:

  • 25 small hot chili peppers
  • 4 cloves garlic
  • Hot cooking oil
  • Salt
  • Bouillon powder

Instructions

  1. Prepare the Chicken:

    • Clean the chicken thoroughly, then make a few shallow cuts in the flesh to help the marinade penetrate deeply.
    • In a mixing bowl, combine the marinade ingredients—bouillon powder, chili powder, minced garlic, Ladaku seasoning powder, coriander powder, and salt. Add this mixture to the chicken, ensuring it’s well-coated. Allow the chicken to marinate for about 2 hours; for best results, marinate overnight in the refrigerator.
  2. Prepare the Coating:

    • In a large bowl, place the Kobe Fried Chicken Flour. For a spicier kick, mix in additional chili powder to taste.
    • In a separate bowl, combine ice water, bouillon powder, and baking powder. Stir until well mixed.
  3. Coat the Chicken:

    • Take the marinated chicken and dredge it in the seasoned flour, ensuring it’s well-coated without pressing down too hard, to maintain a light, crispy texture.
    • Dip the coated chicken into the ice water mixture to make it extra crispy. Then, recoat the chicken with the seasoned flour.
  4. Fry the Chicken:

    • Heat oil in a frying pan over low heat. Fry the chicken, turning occasionally, until it is golden brown and cooked through. Be careful not to burn the chicken.
  5. Prepare the Sambal:

    • While the chicken is frying, prepare the sambal. In a mortar and pestle, grind the hot chili peppers and garlic with a pinch of salt and bouillon powder until smooth. Heat a small amount of oil until it’s hot and pour it over the sambal mixture.
  6. Assemble the Dish:

    • Once the chicken is cooked, transfer it to a plate and gently crush it using a pestle or the back of a spoon to release its juices.
    • Spoon the freshly made sambal over the crushed chicken, ensuring it’s well-coated.
  7. Serve:

    • Serve your Ayam Geprek immediately while it’s still hot and crispy. Enjoy it with steamed rice or as a side dish.

This Ayam Geprek ala Momy Kia offers a harmonious blend of crispy fried chicken and spicy sambal, making it a perfect addition to any meal. Enjoy this flavorful dish with your loved ones and savor the essence of Indonesian cuisine!
