Edwina’s Corn Recipe

Ingredients:

  • 2 packages of white shoepeg corn
  • 8 slices of bacon
  • 1 onion
  • 1 cup sour cream

Instructions:

  1. Cook Corn: Begin by cooking the packages of corn as directed on the package. Ensure they are cooked to perfection.

  2. Fry Bacon: While the corn is cooking, take the time to fry the bacon until it’s nice and crispy. Once done, set it aside for later use.

  3. Saute Onion: In the same pan used for frying bacon, sauté the onion in the flavorful bacon grease. If necessary, you can drain off some of the excess grease.

  4. Combine Ingredients: Once the onion has softened to perfection, add in the cooked corn along with the sour cream. Gently fold everything together until well combined.

  5. Bake: Transfer the corn mixture into a lightly greased baking dish, spreading it out evenly. Preheat your oven to 350°F (175°C), then bake the corn dish for about 25 minutes or until it’s heated through.

  6. Add Bacon: After the initial baking time, crumble the crispy bacon on top of the corn mixture. Return the dish to the oven and bake for an additional 5-10 minutes, or until everything is heated through and the flavors have melded beautifully.
