Edwina’s Corn Recipe
🕒 Total Time: 30 minutes
🍽️ Servings: 4
Ingredients:
- 2 packages of white shoepeg corn
- 8 slices of bacon
- 1 onion
- 1 cup sour cream
Instructions:
-
Cook Corn: Begin by cooking the packages of corn as directed on the package. Ensure they are cooked to perfection.
-
Fry Bacon: While the corn is cooking, take the time to fry the bacon until it’s nice and crispy. Once done, set it aside for later use.
-
Saute Onion: In the same pan used for frying bacon, sauté the onion in the flavorful bacon grease. If necessary, you can drain off some of the excess grease.
-
Combine Ingredients: Once the onion has softened to perfection, add in the cooked corn along with the sour cream. Gently fold everything together until well combined.
-
Bake: Transfer the corn mixture into a lightly greased baking dish, spreading it out evenly. Preheat your oven to 350°F (175°C), then bake the corn dish for about 25 minutes or until it’s heated through.
-
Add Bacon: After the initial baking time, crumble the crispy bacon on top of the corn mixture. Return the dish to the oven and bake for an additional 5-10 minutes, or until everything is heated through and the flavors have melded beautifully.
Serve your delicious Edwina’s Corn straight from the oven and enjoy the delightful combination of flavors and textures!
