Instructions

  1. Prepare the Dough:

    • In a mixing bowl, combine Bajra flour and Whole wheat flour. Add finely chopped methi leaves, red chilli powder, coriander powder, salt, green chilli, and yogurt.
    • Using your fingers, rub and mix the ingredients together. As you rub the dough, it will start to become lumpy. Add a little water at a time and knead it into a stiff dough. Be cautious not to add too much water, as the dough should not become too moist.
    • Cover the dough and let it rest for 15-20 minutes to allow the flavors to meld.
  2. Prepare the Seed Mixture:

    • In a small bowl, mix sesame seeds (til), ajwain (carom seeds), and cumin powder (jeera). Set aside.
  3. Shape the Vadas:

    • Divide the dough into small marble-sized portions. Roll each portion into a smooth ball using your palms.
    • Flatten the balls into small discs using your fingers. Ensure the edges are not cracked to ensure even frying.
    • Sprinkle a pinch of the seed mixture on top of each vada and gently press it into the dough with your fingers. Continue forming the vadas until all the dough is shaped.

    • Heat oil in a kadhai (wok) over medium heat. The oil should be hot but not smoking.
