Instructions

1. Boil and Prepare the Vegetables

Begin by boiling the potatoes and sweet potatoes in a pressure cooker. Once boiled, peel them and set them aside to cool slightly. Steam the green peas and set them aside as well. These three key ingredients will form the base of the Aloo Tikkis.

2. Prepare the Mixture

In a food processor, combine the boiled regular potatoes, boiled sweet potatoes, and steamed green peas. Add grated ginger, finely chopped green chillies, chopped onions, and green chutney (made with coriander and mint). Season the mixture with salt to taste and add corn flour for binding. Pulse the ingredients together until they form a coarse mash. Scrape down the sides of the processor and give the mixture a stir midway to ensure everything is evenly combined.

3. Shape the Tikkis

Transfer the potato mixture into a large bowl. Grease your hands lightly with oil and shape the mixture into small, round patties or tikkis, approximately the size of a lemon. Roll each patty in whole wheat bread crumbs to coat it evenly. For a different presentation, you can also shape the mixture into kebab-like cylinders and skewer them.

4. Bake the Tikkis

Preheat your oven to 200°C (400°F). Place the prepared tikkis on a greased baking tray, ensuring they are spaced apart to allow for even cooking. Bake the tikkis in the preheated oven for 15 minutes, or until they are lightly browned on top. For extra crispiness, you can drizzle a small amount of oil on top of the tikkis before baking, giving them a soft, yet crisp texture.

5. Serve and Enjoy

Once baked, remove the tikkis from the oven. You’ll notice they have a lovely golden-brown crust on top, with a soft, fluffy interior.
