Instructions

  1. Prepare the Oven
    Preheat your oven to 180°C (350°F) for about 10 minutes. Lightly grease a baking tray with a little oil to ensure the kebabs do not stick.

  2. Cook the Vegetables

    • In a non-stick pan, heat the sunflower oil over medium heat. Add the cumin seeds and let them sizzle until fragrant.
    • Add the green chilies and sauté for a minute until their aroma releases.
    • Next, add the chopped carrot, sautéing for 2-3 minutes until it begins to soften.
    • Add in the finely sliced green beans, cabbage, and green peas. Sauté for another 2-3 minutes, mixing well to combine.
    • Sprinkle in the turmeric powder and mix well, cooking until the spices blend with the vegetables.
  3. Blend the Vegetable Mixture

    • Transfer the sautéed vegetable mixture to a blender and pulse until coarsely ground. Do not make it too smooth; a little texture adds to the kebab’s charm. Set this mixture aside.
  4. Prepare the Binding Mixture

    • In the same pan, dry roast the gram flour (besan) over low heat, stirring constantly until fragrant.
    • Add the cashew powder and sauté it briefly. The cashew adds a lovely creaminess and depth of flavor to the kebabs.
  5. Combine and Mix

    • Lower the heat and add the ground vegetables back into the pan, stirring well to incorporate the gram flour and cashew mixture.
    • Sauté this mixture for an additional 2-3 minutes until everything is well combined and the raw smell of gram flour disappears.
    • Transfer this mixture to a mixing bowl.
  6. Form the Kebabs

    • To the bowl, add the breadcrumbs, salt, crushed peppercorns, and cardamom powder. Mash in the boiled potatoes and mix until a dough-like consistency forms.
    • Divide the mixture into equal portions and roll each into a sausage shape around satay sticks, pressing gently to form a tight kebab shape.
  7. Bake the Seekh Kebabs

    • Arrange the kebabs on the greased baking tray, ensuring there is a small gap between each.
    • Place the tray in the preheated oven and bake for 10-12 minutes, turning the kebabs every 4-5 minutes for even browning.
    • Once the kebabs develop a golden crust, remove them from the oven.
