These baked delights are healthier than their fried counterparts, offering a light, yet savory snack that pairs perfectly with a hot cup of masala chai.

Ingredients

Milk Powder (optional) 1 tablespoon
Sesame Seeds (Til Seeds) 4 teaspoons
Onion, finely chopped 1
Green Chillies, finely chopped 3 to 4
Black Pepper Powder (optional) 1 teaspoon
Coriander (Dhania) Leaves, chopped A few
Curry Leaves A few
Sugar 2 teaspoons
Salt To taste

Instructions:

  1. Prepare the Dough:
    Start by combining the all-purpose flour (maida), oil, and melted butter in a large mixing bowl. Using your fingertips, blend the mixture until it resembles breadcrumbs. If needed, add a little more oil to achieve the breadcrumb-like texture.

  2. Add Dry Ingredients:
    To the flour mixture, add milk powder (optional), baking soda, salt, sugar, black pepper powder (optional), sesame seeds, finely chopped onion, green chillies, chopped coriander leaves, and curry leaves. Mix all the ingredients well by hand, ensuring even distribution.

  3. Form the Dough:
    Gradually add lukewarm water, little by little, to form a tight and firm dough. Knead the dough for a few minutes, ensuring it’s smooth and well combined. Cover the dough and let it rest for 10-15 minutes.

  4. Preheat the Oven:
    While the dough is resting, preheat your oven to 180°C (350°F) for about 10 minutes.

  5. Shape the Nippattu:
    After the resting period, divide the dough into small, lemon-sized balls. Take each ball and place it between two thick greased plastic sheets or parchment paper. Using a rolling pin, gently roll the dough into a thin disc of about 3 to 4 inches in diameter.

  6. Prepare for Baking:
    Carefully transfer each rolled Nippattu onto a greased baking tray. Use a fork to poke holes in the center of each disc to prevent them from puffing up during baking.

  7. Bake the Nippattu:
    Place the baking tray in the oven and bake the Nippattu at 170°C (340°F) for 15 to 20 minutes. After 10 minutes, flip the Nippattu to ensure even baking. Continue baking until the Nippattu turn golden brown and are crisp.

  8. Cool and Serve:
    Once the Nippattu are baked to perfection, remove them from the oven and transfer them to a cooling rack. Allow them to cool completely, which will further enhance their crispiness.

  9. Storage:
    Store the Bakery Style Baked Nippattu in an airtight container to maintain their crunch. They will stay fresh for several days, making them an ideal snack for the week.
