- In a mixing bowl, combine the all-purpose flour (maida), oil, and melted butter. Mix well with your hands until it forms a crumbly texture.
- Add the milk powder (if using), baking soda, salt, sugar, black pepper powder (optional), sesame seeds, finely chopped onion, green chilies, fresh coriander, and curry leaves to the flour mixture. Mix thoroughly to ensure even distribution of all the ingredients.
- Gradually add lukewarm water to the mixture, little by little, and knead into a smooth and firm dough.
- Once the dough is ready, cover it with a damp cloth and let it rest for 10-15 minutes.

- After the dough has rested, divide it into small portions and roll each portion into a ball.

- Transfer the rolled dough discs onto a greased baking tray. Using a fork, gently poke holes all over the surface of the nippattu to prevent it from puffing up while baking.
