Ingredients:

Instructions:

  1. Prepare Banana Flowers:

    • Gently undo the petals covering the banana flowers.
    • Pluck the flowers between the petals.
    • Remove the central thread-like portion from each flower strip.
    • Finely cut the flower strips.
  2. Soak Banana Flowers:

    • In a bowl of water, add 1 cup of buttermilk.
    • Soak the cut flower strips in the buttermilk water to prevent darkening.
    • Wash them thoroughly and cook in the same buttermilk water until they are soft.
    • Drain the cooked banana flowers.
  3. Prepare Vada Batter:

    • Grind the cooked banana florets along with red chilies, turmeric powder, grated coconut, broken chana dal, and fennel powder.
    • Add a minimal amount of water while grinding to form a smooth paste.
    • Mix in finely cut onions, ginger, green chilies, coriander leaves, and curry leaves.
    • Add salt and asafoetida to taste, ensuring the vada batter is thick in consistency.
  4. Shape and Fry Vadas:

    • Form equal-sized balls from the vada batter.
    • Place the balls on a greased plastic sheet and flatten them to approximately 5 cm in diameter.
    • Heat oil in a heavy-bottomed vessel for deep frying.
    • Carefully slide the vadas into the hot oil and fry until they turn golden brown and crispy.
    • Once fried, remove the vadas from the oil and drain excess oil on paper towels.
  5. Serve:

    • Banana Flower Vadas are best enjoyed hot and crispy.
    • Serve them with a side of refreshing mint chutney for a burst of flavor.
