Ayam Goreng Bawang Khas Batam (Batam-Style Fried Chicken with Garlic)

Ingredients:

  • 1/2 chicken (any part), cut into small pieces
  • 1 bulb garlic, washed and crushed (with skin on)
  • 1 egg
  • 3 tablespoons cornstarch
  • Salt and mushroom seasoning to taste
  • Cooking oil, as needed

For the Spice Paste:

  • 6 cloves garlic
  • 5 shallots
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground pepper
  • 1.5-inch piece of ginger
  • 1-inch piece of turmeric

Instructions:

  1. Prepare the Chicken: Begin by washing the chicken pieces thoroughly. Drain well. In a large bowl, combine the spice paste, salt, mushroom seasoning, cornstarch, and egg. Mix well to create a uniform marinade.

  2. Marinate: Add the chicken pieces to the bowl and toss them until they are evenly coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the chicken to absorb the seasoning.

  3. Fry the Garlic: Heat a generous amount of cooking oil in a frying pan over medium heat. Add the garlic cloves (with skin on) and fry them until they turn golden brown and crispy. Remove the garlic from the pan and set aside to drain on paper towels.

  4. Fry the Chicken: In the same pan, add more oil if needed and heat over low heat. Fry the marinated chicken pieces in batches to avoid overcrowding the pan. Cook until the chicken turns golden brown and is cooked through. This process should be done over low heat to ensure even cooking and to avoid burning the coating. Remove each batch and drain on paper towels.

  5. Serve: Once all the chicken pieces are fried and crispy, arrange them on a serving plate. Garnish with the crispy garlic cloves that were set aside earlier.
