Crispy Battered Squid (Frittura di Totani in Pastella)

All-purpose Flour (Farina 00) 150g

Sparkling Water (Acqua Gassata) 140g
Lemon (Limone) 1
Flakes of Salt (Fiocchi di Sale) to taste
Fine Salt (Sale Fino) to taste
Sunflower Oil (Olio di Semi) for frying

Instructions:

  1. Begin by squeezing the lemon and setting aside its juice.
  2. Crack the egg, separating the white (albumen) from the yolk, placing them in separate bowls.
  3. Using an electric whisk, beat the egg whites until stiff peaks form.
  4. In a separate bowl, pour the flour and add a pinch of fine salt. Stir to combine.
  5. Add the egg yolk to the flour mixture and mix until smooth.
  6. Gradually incorporate the beaten egg whites into the flour mixture, gently folding them with a spatula to maintain the lightness.
  7. Cover the bowl with plastic wrap and let it sit while you prepare the squid.
  8. Clean the squid by removing the innards, beak, and skin, then cut into rings.
  9. Heat the sunflower oil in a large frying pan, bringing it to a temperature of about 170°C (340°F).
  10. Dip the squid rings into the batter, ensuring they are evenly coated.
  11. Using a fork, lift the squid rings from the batter, letting any excess drip off before carefully lowering them into the hot oil.
  12. Fry the squid for 2-3 minutes or until golden and crispy.
  13. Once cooked, remove the squid from the oil and place them on a wire rack lined with paper towels to drain any excess oil.
  14. Transfer the squid to a serving plate, sprinkle with a few flakes of salt, and serve immediately with a wedge of lemon for a refreshing zest.
