BBQ Chicken Wings Recipe

Ingredients:

For the Marinade:

  • 5 chicken wings
  • 1 lime (juiced)
  • Garlic powder
  • Oyster sauce
  • Ground black pepper
  • Ground nutmeg
  • Ground coriander
  • Salt

For the Coating:

  • 5 tablespoons all-purpose flour
  • 2 tablespoons rice flour
  • Baking powder
  • Garlic powder
  • Ground coriander
  • Mushroom seasoning (or chicken bouillon)

For the BBQ Sauce:

  • 1 packet BBQ sauce (Pronas or your preferred brand)
  • 5 cloves garlic (minced)
  • Tomato sauce
  • Chili sauce
  • Oyster sauce
  • Sweet soy sauce
  • Sugar
  • Salt
  • Ground black pepper

Instructions:

  1. Prepare the Chicken Wings:

    • Begin by thoroughly cleaning the chicken wings. Pat them dry with paper towels.
    • In a bowl, combine the chicken wings with lime juice, garlic powder, oyster sauce, ground black pepper, ground nutmeg, ground coriander, and salt. Mix well to ensure the wings are evenly coated.
    • Allow the wings to marinate for at least 30 minutes. For best results, let them marinate overnight in the refrigerator to absorb the flavors.
  2. Prepare the Coating:

    • In a separate bowl, mix together the all-purpose flour, rice flour, baking powder, garlic powder, ground coriander, and mushroom seasoning.
    • After marinating, coat each chicken wing with the flour mixture. For a crispier texture, dip the coated wings into ice-cold water, then coat them again with the flour mixture.
  3. Fry the Chicken Wings:

    • Heat oil in a deep frying pan or a deep fryer to medium-low heat.
    • Fry the wings in batches, ensuring they are not overcrowded. Cook until they are golden brown and crispy, about 6-8 minutes per batch, depending on the size of the wings.
    • Remove the wings from the oil and drain them on paper towels.
  4. Prepare the BBQ Sauce:

    • In a pan, heat a small amount of oil over medium heat. Add the minced garlic and sauté until fragrant.
    • Add the BBQ sauce, tomato sauce, chili sauce, oyster sauce, sweet soy sauce, sugar, salt, and ground black pepper. Stir well to combine and let the sauce simmer for a few minutes to meld the flavors.
  5. Combine and Serve:

    • Toss the fried chicken wings in the BBQ sauce until they are well coated.
    • Serve the BBQ chicken wings hot, accompanied by steamed rice for a complete meal.
