Ingredients:

  • 2 lbs beef stew meat
  • 1/2 cup water
  • 2 garlic cloves, minced
  • 4 green chilies, chopped
  • 2 tbsp chili powder
  • 1 tbsp vinegar
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 tsp cumin
  • 12 flour tortillas
  • Green chili sauce
  • Lettuce, shredded
  • Sour cream
  • Guacamole

Instructions:

  1. Prepare the Meat Mixture:

    • In a medium saucepan, combine the beef stew meat, water, minced garlic, chopped green chilies, chili powder, vinegar, dried oregano, salt, pepper, and cumin.
    • Bring the mixture to a boil, then cover and reduce the heat to simmer for about 2 hours, or until the meat is very tender.
    • Uncover the saucepan and boil rapidly for approximately 15 minutes, or until most of the water has evaporated. Stir occasionally to prevent sticking.
    • Once cooked, remove the mixture from heat and use two forks to shred the meat finely. Add a little green chili sauce if needed to moisten the mixture.
  2. Prepare the Tortillas:

    • Preheat your oven to 350ยฐF (175ยฐC). Wrap the flour tortillas in foil and warm them in the oven for about 15 minutes.
  3. Assemble the Chimichangas:

    • Spoon approximately 1/4 cup of the meat mixture onto each warmed tortilla, placing it near one edge.
    • Fold the top and bottom edges of the tortilla over the meat filling, then fold the two sides in.
    • Secure the chimichangas with toothpicks to hold their shape.
  4. Fry the Chimichangas:

    • Heat about 1/2 inch of oil or fat in a frying pan over medium-high heat.
    • Carefully fry the filled tortillas for about 1 minute on each side, or until they turn golden brown.
    • Once fried, drain the chimichangas on paper towels to remove excess oil.
  5. Serve and Enjoy:

    • Keep the cooked chimichangas warm in a 300ยฐF (150ยฐC) oven while frying the remaining ones.
    • To serve, ladle some green chili sauce over the chimichangas and top them with shredded lettuce, sour cream, and guacamole.

Recipe Notes:

  • Freezing Option: Unfried chimichangas can be prepared ahead and frozen for later use. Simply follow the recipe instructions until assembling the chimichangas, then freeze them in freezer bags. Thaw before frying as directed. Additionally, the recommended green chili sauce can also be frozen for future use.

With its savory filling and crispy exterior, these Chow Down Chimichangas are a delightful treat that will have everyone coming back for more. Enjoy the vibrant flavors of the Southwest with this irresistible recipe! ๐ŸŒถ๏ธ๐Ÿฅ‘
