Crispy Beef Stracetti and Veggie Cones

Ingredients:

Beef (thinly sliced) 300g
Carrots 100g
Green beans 100g
Zucchini 120g
Balsamic vinegar 50g
Extra virgin olive oil 50g
Fine salt To taste
Black pepper To taste
All-purpose flour As needed

Instructions:

  1. Prepare the pastry cones:
    To start, lay the pastry discs flat on a work surface. Place a 12 cm-long aluminum cone, with a 3 cm opening, in the center of each disc. Gently wrap the pastry around the cone and seal the edges by pressing them together with your fingers. Once sealed, brush the surface of each cone with a beaten egg. Arrange the cones on a baking tray lined with parchment paper.

  2. Prepare the vegetables:
    Begin by washing all the vegetables thoroughly. Trim the green beans and cut the zucchini into thin strips. Peel and slice the carrots into long, thin strips. These vegetables will add a delightful crunch to your cones!

  3. Sauté the vegetables:
    In a pan, heat 20g of olive oil and sauté a whole garlic clove for flavor. Once the garlic is fragrant, add the green beans and cook for 3-4 minutes. Next, add the zucchini strips, cooking everything for a few more minutes until the vegetables are tender but still crisp. Set the vegetables aside to cool.

  4. Prepare the beef:
    Slice the beef into thin strips and dust them lightly with flour to coat. This will help them cook evenly and create a flavorful sear.

  5. Cook the beef:
    Heat 30g of olive oil in a separate pan over medium heat. Add the floured beef strips and sauté them, seasoning with salt and black pepper to taste. Once the beef is browned, pour in the balsamic vinegar. Let the vinegar cook off and the beef to finish cooking. Remove from heat.

  6. Assemble the cones:
    Once the pastry cones have cooled slightly and are crispy, it’s time to fill them! Take one cone at a time and stuff it with the sautéed vegetables and the balsamic-infused beef strips. You can use kitchen tongs to help gently pack the ingredients into the cone, making sure each one is generously filled.

  7. Serve and enjoy:
