Crispy Beef with Kaffir Lime Leaf Sambal

Ingredients:

  • 500 grams fresh beef
  • 100 grams red chili peppers
  • 8 shallots
  • 3 cloves garlic
  • 2 kaffir lime leaves
  • Vegetable oil, as needed
  • 2 stalks green onions
  • 1 teaspoon sugar

For the Marinade:

  • 3 cloves garlic
  • 2 candlenuts
  • Coriander seeds, to taste
  • 2 bay leaves
  • Salt, to taste
  • 3 cm ginger

Instructions:

  1. Prepare the Beef:

    • Begin by washing the beef thoroughly and cutting it into bite-sized pieces according to your preference.
  2. Make the Marinade:

    • Blend the garlic, candlenuts, coriander seeds, and bay leaves into a smooth paste. Season with salt and add the ginger. Mix well.
  3. Marinate the Beef:

    • Combine the beef pieces with the marinade paste. Add a little water to ensure the beef is well-coated. Cook the beef mixture over medium heat for about 30 minutes, or until the water has evaporated and the beef is tender.
  4. Fry the Beef:

    • Once the beef is tender, remove it from the heat and let it cool. Heat oil in a pan and fry the beef pieces until they are golden brown and crispy. Remove the beef from the oil and set aside.
  5. Prepare the Sambal:

    • Boil the red chili peppers, shallots, and garlic until they are soft. (If you like, you can add tomatoes for a richer flavor.)
    • Blend the boiled chili peppers and shallots into a paste. Heat a little oil in a pan and sauté the paste over medium heat until it is well-cooked and fragrant.
    • Add the kaffir lime leaves, a pinch of salt, and a little sugar to taste. Continue to cook the sambal until it is fully cooked.
  6. Combine and Serve:

    • Stir in a couple of tablespoons of the beef broth from the cooking process into the sambal and mix well.
    • Add the green onions and the fried beef pieces to the sambal. Toss everything together until the beef is well-coated and the flavors are well combined.
  7. Finish:

    • Remove from heat and serve the crispy beef with kaffir lime leaf sambal hot. Enjoy this flavorful and spicy dish with steamed rice or as a side dish with your favorite meal.
